Chunky Apple Cinnamon Muffins

Craving a muffin but still want it to be diet-friendly and nutritious? No problem, these sweet, soft muffins taste like pure heaven while providing healthy fats and good carbs. The apples get mushy and provide great flavour while the cinnamon reminds me of warm winter nights with spicy hot chocolates by the fireplace. And, other than your sugar loaded Blueberry Muffin at Starbucks, these will keep you full for quite a while. Serve with a dollop of vegan whipped cream and have a relaxing coffee break.

For 12 muffins you'll need:
250g spelt flour
1 Tbsp baking powder
50g cornstarch
50g coconut sugar
1 Tsp vanilla
2 Tsp cinnamon
100g apple sauce
100g coconut oil (melted)
100g liquid sweetener of choice (maple syrup, agave, rice malt syrup)
½ lemon
125ml plant milk (soy works best)
2 apples
In a bowl, mix all the dry ingredients. Take another bowl and combine oil, apple sauce, sweetener, the juice of the lemon and milk. Peel and grate the apples before adding them into the wet mixture. Add in the dry mixture and stir well until all the lumps are gone.
Lay out some muffin tins and place about 2 Tbsp of the batter into each tin. Bake for 30 minutes at 175 degrees Celsius.
Remove from the oven, let them cool slightly but serve them while they are still warm.
